May 26: Kale chips it is!!!

I am obsessed with kale. I make kale salads and kale chips, and I think it's so yummy.

Yup, am obsessed with kale...not because it is so good for you, but mainly because it is the only thing that is currently growing prolifically in my veggie garden so far...so not wanting to waste it am making homemade kale chips every day. Actually, kale chips and kale in smoothies are the best way to hide the rather earthy grassy flavor! (Sometimes I feel like a cow when eating kale...feel like I should ruminate because I just can't swallow it). Kale chips also sound rather indulgent, sprinkled with a dash of olive oil, salt and freshly ground pepper and popped in the oven for 8 minutes...very proud of my organic (fertilized partly by Campbell and Mouse), homegrown produce!
